Thai Beef With Fried Egg and Rice

This beef fried rice recipe gives you a quick and easy meal that will get you full and satisfied. With Thai-style beef jerky, every grain of rice coated in egg, and a little kick from finely chopped chili, it's the perfect midweek dinner you can always rely on.

Easy Beef Fried Rice Recipe

Remember when I shared my Thai-style beef jerky recipe and mentioned that the beef will keep in the freezer for 1 month? Well, here's an amazing thing that could come out of keeping that beef jerky in your freezer:  this Golden Asian Beef Fried Rice!

This is not a typical Asian / Thai / Chinese beef fried rice. It's special because I use fried Thai salted beef ( neau kem – เนื้อเค็ม) in it. We call this dish 'khao pad neau kem' simply because 'khao pad' means 'fried rice' and, of course, 'neau kem' means 'salted beef' in Thai.

This recipe is really, really tasty and takes so little time to make you can even make it on a weekday.

How To Make Dried Beef

Drying beef for this beef fried rice recipe is very easy. You can follow my Thai beef jerky or Thai sun-dried beef recipe. But if you can't make it yourself, you can use any beef jerky or cut of beef you can find. It will still be very tasty, although not exactly the same. But hey, I understand that not all of us have all the time in the world and the sunshine to dry our own beef, right?

What Makes This Dish Special

I use a bit of finely chopped chili together with garlic to create this nice chili and garlic fragrance. But don't worry! The amount of chili used in this beef fried rice recipe isn't enough to make it spicy at all. Though if that's what you want, then go ahead and add more! I know sometimes only spicy fried rice will do. And that's especially true if you're a hardcore Asian like me. 😜

Ways To Cook Eggs In Your Fried Rice

As with most Asian fried rice, you can either:

  • Add beaten eggs to the wok and try to break them into little pieces as they cook
  • Do what I like to do when I make this beef fried rice, which is quickly mix beaten eggs with the rice. This is so that every grain of rice is coated in egg.

Both methods are good, and this totally depends on you. Though, I prefer the latter for my dried beef fried rice. It's tasty and it allows you to achieve that beautiful golden color.

Ingredients

  • 1 tablespoon of canola oil
  • ½ tablespoon of finely chopped chili
  • ½ tablespoon of finely chopped garlic
  • ½ cup of diced carrot
  • 5 cups of steamed jasmine rice
  • 2 eggs, beaten
  • 3.52 ounces of fried dried beef or beef jerky, cut into small pieces
  • 4 tablespoons of soy sauce
  • 2 green onions, finely chopped
  • lime wedges

Instructions

  1. Add the canola oil to a wok over medium heat and fry the chilis, garlic and carrot. (There is no need to wait for the oil to be hot or the chili and garlic will burn).
  2. Once the carrot is cooked, add rice and stir until everything is mixed together.
  3. Pour the eggs over the rice and quickly stir and toss until each grain is coated in egg.
  4. Add the fried dried beef or beef jerky and season the fried rice with soy sauce.
  5. Turn the heat off and add the green onions. Stir to mix the green onions with the rice.
  6. Serve warm with lime wedges and squeeze the lime over the rice and mix to enjoy.

How To Serve Beef Fried Rice

When it comes to serving this Thai fried rice, don't forget the lime wedges! They're as important as the beef. This fried rice already has a nice fragrance from chili and garlic, the saltiness from the soy sauce and the beef. All it needs now is just a squeeze of lime juice. The lime juice is going to add that little something to complete the dish.

If you want to have more vegetables, you can also serve this dish with cucumber, green onions or cilantro. Oh, and remember to make nam pla prik (Thai chili fish sauce condiment) too. It's going definitely to lift the flavor of your fried rice.
